Peter's favorite Holiday Recipe

CIOPPINO

"On Christmas Eve, Italian tradition is to make seven fish plates, Coppino(Italian fish stew) is one of the dishes that I make.

Everybody makes it a little different, below is my version."

INGREDIENTS:

3/4 cup butter
2 onions, chopped ( I don’t use them, I substitute with shallots)
2 cloves garlic, minced
1 bunch fresh parsley, chopped
2 (14.5 ounce) cans stewed tomatoes
2 (14.5 ounce) cans chicken broth
2 bay leaves
1 tablespoon dried basil
1/2 teaspoon dried thyme

1/2 teaspoon dried oregano
1 1/2 cups white wine
1 1/2 pounds large shrimp - peeled and deveined
1 1/2 pounds bay scallops
18 small clams
18 mussels, cleaned and debearded
1 1/2 cups crabmeat
1 1/2 pounds cod fillets, cubed

PREPARATION:

Over medium-low heat melt butter in a large stockpot, add onions (or shallots), garlic and parsley. Cook slowly, stirring occasionally until onions (or shallots)are soft. Add tomatoes to the pot (break them into chunks as you add them). Add chicken broth, bay leaves, basil, thyme, oregano, and wine. Mix well.

Cover and simmer 30 minutes. Stir in the shrimp, scallops, clams, mussels and crabmeat. Stir in fish, if desired. Bring to boil (DON’T OVER BOIL). Lower heat, cover and simmer 5 to 7 minutes until clams open.Ladle soup into bowls and serve with warm, crusty bread. Delicious!

TEAM SPOTLIGHT

Debbie Neri - Our Valued Estimator

One of the perks of working for a tile installation leader is the ability to review and estimate potential jobs for Installations Plus, Inc., allowing Deb's flair for design appreciation to come to life every day, in every job we do!

Debbie works hard everyday to create estimates that are both accurate and a great value for our customers. To do this, she uses the latest software to assess what we will need for each job, based on plans and take offs that clients send to us.

Debbie lives a philosophy of enjoying every moment with a sense of enthusiasm and personal investment. Whether cheering on her kids in sports, having a great meal on a Friday night out, or getting together with the gang to watch the Patriots, Debbie is passionate in all she does. From snowshoeing in winter, hikes that put us all to shame, to lounging on the beach in summer; from painting to redecorating; Debbie lives a life of style and aesthetics – which she gladly brings to the Installations Plus team!

Famous Structures That Feature Marble

The Taj Mahal is built entirely out of marble, but it’s not the only impressive structure that features this durable natural stone!

The Green Temple of Apollo and the Leaning Tower of Pisa (pictured below) are also constructed with marble. Even after the invention of concrete, people continued to use marble to give a more impressive look to their buildings. The Washington Monument and Lincoln Memorial are buildings that relied heavily on marble.
